When you are replying to a post, you'll notice there is a list of previous posts below where you are typing, under "Topic summery".
Just go up to the top of the post you wish to quote, and hit the "Insert quote" option.

Or you can change your options so "Quick Reply" is on, then just click quote like you always do, and they just build-up.
